Fun Fact: Blue is an extremely rare color in nature, less than 1 in 10 plants have blue flowers. Blue light has more energy than any other light in the visible spectrum so that may be part of it, but it also has to do with naturally occurring pigments. Red pigments, called anthocyanins can be changed by varying acidity. But there are no naturally occurring blue pigments so the color has to come through by means of reflection instead of absorption.
